Pumpkin Spice Oat Balls

As a busy mom and health and wellness coach I am in need of grab and go options, especially at snack time. While I do keep packaged snacks on hand for my family it’s not always ideal. Most snack options on the shelves are not so healthy and the healthier ones aren’t always budget friendly. Meal prepping your own snacks ensures you’re eating something healthier and it’s more cost effective.

These oat balls are delicious, easy to make and kid friendly. Plus, these are perfect for fall!

What you need:

3/4 cups oat flour

A few pinches of sea salt

3 tbsp of maple syrup

1/2 cup peanut butter

2 tsp pumpkin pie spice

1 tsp vanilla extract

Directions: Add all ingredients to a bowl and mix until smooth. Then begin to scoop out about 2 tbsp per ball and roll into balls. Store in a glass container in the fridge for up to 1 week or in the freezer for longer. Enjoy!
