Chopped Mediterranean Quinoa Salad

This is not the most traditional way of making a greek salad but it is absolutely delicious and so easy to make! I love to meal prep a huge batch of this and eat it throughout the week for lunches!

*I used vegan feta cheese for this recipe. you can use regular feta cheese or cut out the cheese altogether.

Makes 2 servings

Ingredients:

2 cups cooked quinoa
1 cup diced bell pepper
1 cup diced tomato
1/4 cup diced red onion
1 cup diced cucumber
1 cup of canned garbanzo beans, drained and rinsed
1/3 cup olives (I used Kalamata)
1/2 cup feta (I used this vegan feta here)
1/3 cup diced pepperoncinis
3/4 cup fresh minced parsley
The juice of 2 lemons
4 tbsp avocado or olive oil
A few pinches of salt

Directions:

Add all ingredients to a mixing bowl. Mix until well combined. Serve and enjoy!
