3 Bean Salad

This is one of my favorite salads to meal prep. It is amazing on it’s own as a refreshing spring or summer salad and it also makes for the perfect side. I love serving this salad with a serving of roasted vegetables and choice of protein. It’s also perfect to pack for picnics or to bring to a BBQ! This salad is filled with protein, healthy fats, fiber and vitamins and nutrients like iron and folate.

Makes 6 servings

Ingredients:

1 can garbanzo beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can cannelloni beans, drained and rinsed
2 cup diced celery
1/2 cup red onion diced
1/2 cup fresh parsley miced
1/4 cup apple cider vinegar
pinch of salt
1/3 cup avocado oil
pinch of ground black pepper
juice of 1 lemon

Directions:

Add all ingredients to a large mixing bowl and toss until well combined. Serve with your favorite veggie and protein!
