Marinated Kale Salad

If you don’t already marinate your kale, this is your reminder to start! Kale is a leafy green that can hold dressing for a couple days without going soggy (so say goodbye to carrying a bottle of dressing on your commute to the office). Kale also tastes SO much better when it has been marinated (trust me!). This is one of my favorite salads to meal prep for busy weeks because it only requires a few simple ingredients, making it so easy to prep.

Makes 2 servings

Ingredients:

2 1/2 cup kale, washed and chopped
1 cup diced bell peppers
1/4 cup diced red onion
1/3 cup fresh parsley minced
1 cup cooked quinoa (or your choice of protein)
Juice of 1 1/2 lemons
2 tbsp avocado oil
pinch of salt
1/4 cup pine nuts

Directions:

Add all ingredients to a large mixing bowl. Mix until well combined. Store in glass containers for up to 3 days or enjoy right away!
