Green Goddess Salad

This recipe is one of my all time favorite recipes. It is packed with so many vitamins and nutrients AND it is the perfect meal prep recipe (yes, finally a salad where you can prep the salad with the dressing on top!). This salad has lots of fiber and protein to help keep you full and satiated and this dressing is sure to satisfy any craving.

Makes 6 servings

Ingredients:

Dressing:
1/4 cup hempseeds
2/3 cup cashews
3/4 cup fresh basil
3/4 cup fresh parsely
1/4 cup chives
2 lemons juiced
1/4 cup red onion
1/4 cup nutritional yeast
1/2 cup filtered water
1 1/2 tsp salt (or to taste)

Salad:
3 cups chopped cabbage
1 can garbanzo beans, drained and rinsed
1 large green bell pepper diced
1 large cucumber diced

Directions:

Add the salad ingredients to a bowl. Then in a high speed blender, blend the dressing ingredients together until smooth. Pour the dressing over the salad, toss and enjoy!
