Meal Prep Friendly Harvest Bowl

I love anything that is delicious, nourishing, easy to make and meal prep friendly. As a busy mom of two, I need all the help I can get with saving time but I don’t want to compromise my health goals or get stuck eating boring meals because of it. This is where meals like this Meal Prep Friendly Harvest Bowl comes in.

Everything in this bowl can be prepped ahead of time so you can easily put this meal together or use each ingredient separately in other meals throughout the week. This will save you time and energy in the kitchen which is a must for any busy person.

What you need (serves 2):

1 large sweet potato

1 15 oz can garbanzo beans drained and rinsed

2 tbsp avocado oil

A few pinches of salt

2 cups of cooked quinoa

1 medium cucumber diced

1 avocado halved

A few handfuls of chopped mixed greens or other green

Fresh minced cilantro

Simple Tahini Sauce

3 tbsp tahini

Juice from 1 lemon

2 tbsp water

A pinch of salt

Directions: Preheat your oven to 400. Line a baking sheet with parchment paper. Toss the sweet potato, garbanzo beans, oil and salt on the baking sheet and place in the oven for 25 minutes. Option to keep the sweet potato and garbanzo beans separate on the pan to store in separate containers. Meanwhile combine the Simple Tahini Sauce ingredients together in a jar and whisk till smooth. Remove the garbanzo beans and sweet potato from the oven and assemble your bowl with the mixed greens, cooked quinoa, cucumber, fresh minced cilantro and the tahini sauce. Enjoy!
