Quinoa And Chopped Veggie Salad
Meal prep is so important to help you consistently eat better. When you consistently work at something you see results, end of story. If you have goals centered around weight loss, healthier skin and hair, better digestion, better energy and mood or whatever it may be, then you need to consistently work at eating healthier. This is where meal prepping comes in.
One of my favorite things to meal prep, and what I encourage my health coaching clients to prep weekly, is a big healthy salad to have for lunches throughout the week. Many of us start off the day strong but then when lunch time rolls around we tend to forget our goals and reach for something not so healthy. Having something meal prepped makes eating a healthy option excuse-proof.
This Quinoa and Veggie Salad is one of my favorite meal prep ideas because it is easy to put together and delicious.
What you need (serves 4-5)
3 cups cooked quinoa
1 15 oz can garbanzo beans drained and rinsed
1 cup diced cucumber
1 cup diced tomato
1/2 cup diced red onion
1/4 cup fresh minced cilantro
1/4 cup fresh minced parsley
2 lemons juiced
A few pinches if salt
1/4 cup pumpkin seeds
1/4 cup pistachios chopped
1 6oz block of feta cheese (option to use vegan)
Directions: Add all ingredients to a bowl. Toss until well combined. Store in an airtight glass container in the for up to 5 days. Enjoy.
