Gut Friendly Nourish Bowl

I am all about quick and easy nutrition that also happens to be delicious. This is one of those types of meals.

This bowl contains:

  • Protein to keep you full and satiated. Plus, it is fuel for your muscles and skin

  • Healthy fats to keep you satiated after eating. Plus, it nourishes your skin, digestion and brain health

  • Carbohydrates to support your energy for the day

  • Fiber to keep you full and satiated after eating. Plus, it helps improve digestion to help with hormone balance and skin health

  • Gut friendly foods like sauerkraut to promote healthy digestion

  • lots of hydrating and brightening foods to help you glow from within

For this bowl, I recommend making a large batch of the roasted chickpeas as well as the quinoa. This will help you save so much time in the kitchen and ensure that you have healthy protein available in a flash. They can easily be tossed on bowls and other meals throughout the week.

Garlic Smoky Roasted Chickpeas (serves 2):

Ingredients:

1 15 oz can garbanzo beans drained and rinsed
1 tsp salt
1 tsp smoked paprika
1 tsp garlic powder
2 tbsp avocado oil

Directions: Preheat your oven to 375. Line a baking sheet with parchment paper. Toss all of the ingredients onto the pan and give them a toss. Place in the oven to bake for 25 minutes.

The Dressing (serves 2)

Ingredients:

1 lemon juiced
1 tbsp dijon mustard
4 tbsp olive oil
a pinch of salt

Directions: Whisk all ingredients in a jar. Store in the fridge for up to 5 days.

The Nourish Bowl (serves 1)

Ingredients:

I large handful of leafy greens
1/2 cup carrots diced
1/2 cup diced cucumber
1/2 cup cooked quinoa
2-3 tbsp hummus
1/4 of an avocado sliced
a few tbsp of sauerkraut
1 serving of Garlic Smoky Roasted Chickpeas
1 serving of The Dressing
Fresh minced cilantro for garnish
