No Bake Brownie Bars

I love having a sweet treat once in a while but since discovering a healthier way of eating, typical sweets just don’t leave me feeling my best. Added sugars are often the cause for brain fog, low energy, moodiness, lack of focus and concentration, skin issues and more. This is why I try to sweeten with real fruits like dates and banana. These foods are filled with fiber and have a lower glycemic index so they won’t cause blood sugar spikes like other sugars

These brownie bars are only sweetened with dates. They are easy to make, delicious and meal prep friendly.

You will love these because they are quick to make and require no baking. Plus you will love how they make you feel even more.

What you need (make 12 brownie bars)

1/2 cup plus 2 tbsp almond flour

1/4 plus 2 tbsp cup cacao powder

1/4 cup date syrup

1/2 cup peanut butter

A pinch of salt

2 tbsp coconut oil

Directions: Add the almond flour, 1/4 cup cacao powder, date syrup, peanut butter and salt to a bowl and mix till well combined. Line a small baking dish with parchment paper and press the dough into the dish until flat. Then freeze for at least 2 hours. Meanwhile combine the remaining cacao powder and coconut oil in a saucepan over low heat and whisk till smooth. Pour over batter and freeze for a few minutes. Remove from the freezer, slice into bars and enjoy. Store in the freezer for best results.
