Viral Snickers Stuffed Dates

Sometimes recipes that go viral are fun to make once but others like these Snickers Dates are meant to be made over and over again because they are that delicious and also simple to make!

Stuffed dates make the perfect guilt free midday energizing snack and they will satisfy when a sweets craving hits. I love these as a healthier dessert option too.

I always have these stocked in my freezer. My family is obsessed with them so I make sure to prep a big batch at once so we will have them for a while (as long as they will last anyways!)

Makes 20

20 pitted dates

1/3-1/2 cup almond or peanut butter

1 handful of almonds or peanuts chopped

1/3 cup dark chocolate chips (I used these here because they’re made with coconut sugar which has a lower glycemic index than other sugars)

1 tsp coconut oil

Directions: Cover a large plate or tray with parchment paper to prevent sticking. Begin by making a vertical slice on one side of each date to create an opening for the filling. Then begin stuffing each date with about 1/2- 3/4 tbsp of nut butter. Place each on the parchment paper. Place in the freezer for about 30 minutes to an hour. Then add the chocolate chips and coconut oil to a bowl and microwave until melted OR place in a stove top pan over low heat and stir until melted. Drizzle the chocolate onto the dates. Sprinkle the chopped nuts over the chocolate. Option to add another layer of chocolate. Place back in the freezer until the chocolate has solidified and enjoy. Store in the fridge for up to a week or store in the freezer for longer. Enjoy.
