No Bake Superfood Brownie Bars
You can guarantee that there is always a healthy homemade “sweet treat” ready for grab and go in my freezer. Having homemade options for snacks and desserts is a great way to control the ingredients and amount of sugar in your diet.
I love to make these No Bake Superfood Brownie Bars or something similar for a quick and healthy snack. I love sweetening them with real fruit like dates because they have nutritional benefits and won’t spike your blood sugar like other sugars. Unlike cane sugar, maple syrup and other types of sugar, dates contain fiber which helps to slow the release of insulin which in turn helps to delay the absorption of glucose in the bloodstream. This prevents blood sugar spikes which can be the cause of low energy, skin issues, and more.
I love these bars because they include things like cacao, goji berries, pumpkin seeds and walnuts. These superfoods contain amazing beneficial vitamins and minerals.
What you need (makes 10 bars):
1/2 cup organic rolled oats
1/2 cup almond flour
1 pinch of salt
8-9 soft pitted medjool dates
1/3 cup cacao powder
2 tbsp hempseed
1/4 cup nut or seed butter (I have tried almond butter and sunflower butter and both work great)
1/4 cup pumpkin seeds
1/4 cup chopped walnuts
1/4 cup goji berries
Directions: Combine the first 7 ingredients in a food processor until smooth. Line a brownie pan with parchment paper. Transfer the batter to the brownie pan and press into the pan. Sprinkle on the remaining ingredients and press down firmly to keep the toppings in place. Place in the freezer for at least 2 hours. Remove from the freezer. Slice into bars and enjoy. Store in a reusable silicone bag in the freezer for best results.
