Unsweetened Pumpkin Banana Bread
If you are looking for a healthier fall inspired bread that also happens to be added sugar free then this pumpkin banana bread is for you.
Consuming large amounts of added sugar can cause skin issues, headaches, brain fog, poor concentration, weight gain and more. I do love a sweetened pumpkin and banana bread once in a while but when I am trying to limit mine and my families sugar intake I bake this bread (especially when baking is happening often during the cooler months).
This bread is sweetened only with banana and it is delicious.
Ingredients:
2 1/4 cup almond flour
1/4 cup tapioca starch
1 tsp baking powder
2 1/2 tsp pumpkin spice pinch of salt
1/2 cup coconut oil melted
1 banana mashed
2 tbsp almond milk
2 eggs
1/3 cup pumpkin puree
1 tsp vanilla extract
2/3 cup chocolate chips, walnut or pecans (optional)
Directions: Preheat your oven to 350. Line a loaf pan with parchment paper or oil. In a medium bowl, whisk together the almond flour, tapioca starch, baking powder and salt. In a separate bowl, mix together the coconut oil, banana, almond milk, eggs, pumpkin puree and vanilla extract. Then combine the wet and dry ingredients. Then fold in the chocolate chips, walnuts or pecans.
Once well combined, transfer the batter to your bread loaf pan. Bake for 50-55 minutes or until a toothpick goes in and out smooth. Let cool and enjoy.
