Chocolate Pistachio Protein Overnight Oats
Overnight oats are a favorite breakfast of mine to save time and eat healthier. What I love most about overnight oats is just how simple they are to make. After getting all your ingredients out it takes just under 2 minutes to assemble this meal prep friendly breakfast.
This is one of my favorite combinations. It’s naturally sweet, chocolatey and crunchy! I also love using pistachios here because they are a great source of healthy fats, fiber and antioxidants which is essential to glowing from the inside out.
What you need (serves 2):
3/4 cup rolled oats
1 scoop vanilla or chocolate protein powder (I love this one here)
1 1/2 tbsp chia seeds
2 tbsp cacao or cocoa powder
3 tbsp chopped pistachios
1 banana mashed
1 1/2 cups unsweetened almond milk or other plant based milk
Directions: Bring all ingredients together in a jar or glass Tupperware. Whisk till well combined. Cover and set in the fridge for 3 hours or overnight. Enjoy!
If you choose to forgo the protein powder just add another 1/2 tbsp of chia seeds and slightly less liquid.
