Pumpkin Flax Granola
A healthy granola these days can cost anywhere from $7-$15… that price to me is high for some oats! Instead I love to prep my own at home. Doing this helps you to save money as well as helps you avoid some unhealthy ingredients. Making your own granola at home is actually so easy AND quick!
This is one of my favorite recipes that I make weekly. It contains pumpkin seeds which are a great source of protein, healthy fats, fiber and magnesium. It also contains flaxseed which is a great source of healthy fats, fiber and B1.
What you need (serves 4-6)
1 cup gluten free rolled oats
1 tsp vanilla extract
1 tbsp brown rice flour
1/2 tbsp maple syrup (1 tbsp if you prefer it sweeter)
A pinch of sea salt
1 tbsp flax meal
1/3 cup pumpkin seeds
Optional dash of cinnamon
2 tbsp coconut oil melted
Directions: preheat your oven to 325. Line a baking sheet with parchment paper. Add all ingredients to the baking sheet and toss. Spread out evenly. Place in the oven for 12 minutes. Remove from the oven. Let it cool then transfer to a covered glass container. Store on the counter for to 7-10 days. Enjoy.
