Roasted Herb Chickpeas
I love adding roasted chickpeas to any salad or bowl. It is such a great way to add more texture to your plate as well as nutrition. Chickpeas are a great source of fiber, protein, healthy fats as well as vitamins and minerals like iron, B vitamins, manganese, folate and copper. I also love them because once seasoned and roasted they can help make a meal (especially a healthy one) more delicious.
These Roasted Herb Chickpeas are one of my favorites. They pair well with almost any bowl and they only require a few ingredients.
I added smoked paprika to mine to add a little smoky flavor but you can skip it if you prefer them without!
I roasted mine in the oven but you can also cook these over the stove top or in an air fryer!
What you need (serves 2-3):
1 15 oz can garbanzo beans drained and rinsed
1/2 tsp of salt
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp dried parsley
1 1/2 tbsp cooking oil
Directions: Preheat your oven to 400. Line a baking sheet with parchment paper. Add all of the ingredients to a pan and toss. Place in the oven for 20-25 minutes. Remove from the heat and sprinkle over any salad or bowl. Store in an airtight container in the refrigerator for up to 7 days. Enjoy!
