Gingerbread Chocolate Chip Protein Balls
Ever since having kids, snack time has become a big deal (iykyk!). I try to keep as many healthier options on hand to keep us energized between lunch and dinner. Most packaged snacks out there are loaded with added sugars so I love to make my own without them or with just less of them. Plus, homemade tastes better and saves you money.
I love making protein balls because they store well in the fridge and freezer and are a great grab and go option.
These protein balls are so festive for the winter season as well as delicious.
What you need:
1 scoop vanilla protein powder
5 pitted dates (soaked in water for at least 2 hours)
1/2 cup almond flour
2 tbsp flax meal
a pinch of sea salt
1 cup peanut or almond butter
3/4 tsp gingerbread spice (see below)
1 bar of chocolate diced
Directions: Begin by mashing the soaked dates then fold in the protein powder, almond flour, flax meal, nut butter and gingerbread spice. Option to blend in a food processor. Then fold in the chocolate chips. Roll about 1 1/2 tsp of batter into balls. Store in an airtight container in the fridge for 1 week or in the freezer for longer.
tip: if the balls are too dry to roll, add 1-2 tbsp of water to moisten.
Gingerbread Spice Blend:
mix together
3 tbsp cinnamon
3 tbsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1/2 tbsp all spice
