Spring Berry Salad

Salads are one of my favorite meals to make. They are so quick, easy and a great way to get in loads of beautiful and essential vitamins and nutrients. This salad is inspired by a trip to the farmers market during spring time. This is one of my favorite times of year to go to the farmers market because the stands are bursting with fresh, seasonal produce. Every season, nature gives us exactly what we need to glow from the inside out, especially in Spring. This is one of my favorite salads to prep during spring.

Ingredients:
Serves 1

A few handfuls of chopped kale
1/3 cup diced cucumber
1/3 cup diced celery
1/3 cup diced strawberries
1/2 an avocado
1/4 cup chopped pistachios
1 cup cooked quinoa
A serving of the Creamy Balsamic Vinaigrette

Directions: Add all ingredients to a bowl, toss and enjoy!

Creamy Balsame Vinaigrette

1/4 cup balsamic vinegar
1/2 cup olive or avocado oil
a few pinches of fresh ground black pepper
a few pinches of salt
1 tsp garlic powder
1 tbsp dijon mustard
1 tbsp filtered water
optional 1/2 a lemon juiced

Directions: Add all ingredients to a jar and whisk till smooth. I recommend using a blender or immersion blender for the best consistency. Store in the fridge for up to 1 week.
