Apple Avocado and Pecan Salad With Hot Honey Roasted Chickpeas

This is my go to salad for fall. It is delicious, easy to prep and packed with so many amazing vitamins and nutrients. This salad contains everything you need to glow from the inside out:

Apples- these are high in fiber and they contain pectin (a gel forming fiber that acts like a prebiotic for the gut) which have significant benefits for your digestion. Apples also contain Vitamin C and antioxidants which are amazing for glowing skin.

Avocados- they are high in healthy fats and fiber which are beneficial to your digestion and skin health.

Pecans- another healthy fat and source of fiber for your digestion and skin health. Plus they also contain vitamin e which is nourishing for your skin.

This salad does contain chickpeas which are a great source of protein however I do recommend adding an additional source of protein like tofu, salmon, quinoa or whatever you are craving.

What you need (serves 2):

2 servings of the Tangy Tahini Dressing from Glow From Within recipes

Hot Honey Roasted Chickpeas

A few handfuls of chopped kale

1 apple diced

1/3 cup chopped pecans

1 avocado diced

Additional protein of choice

Directions: combine all ingredients in a bowl and enjoy!
