Vegan Peppermint Mocha Creamer

One of my first trips to New York City during Christmas time I experienced my first Peppermint Mocha from Starbucks. It was love at first sip. Ever since then I have craved a peppermint mocha every winter. Also since then my passion for healthy eating has grown. I have come to understand how to fuel my body to feel my best and consuming excess sugar and other unhealthy ingredients that are in typical peppermint mocha creamers is not ideal.

My peppermint mocha creamer is plant based, added sugar free and made with whole and real ingredients. This is a mocha you can feel good about drinking.

I add this to coffee or matcha as well as serve as a minty chocolate milk or heat over the stove top to enjoy as a hot cocoa.

what you need (makes 198 oz)

18 oz water

2 pitted dates

1 tsp vanilla extract

1/3 cup spearmint or a few drops of peppermint extract

A pinch of sea salt

1/4 cup cacao powder

1/2 cup raw cashews

Directions: add all ingredients to a hight speed blender. Blend till smooth. Pour into a cheese cloth, milk bag or fine mesh strainer over a bowl. Pour into a glass bottle to store in the fridge for up to 5 days.
