Roasted Veggie Pasta

Pasta night is my favorite night as a mom. It is by far the easiest of meals to make for my family and it is one of the only ways to get my toddler so sit down and eat easily. While pasta is already pretty simple on it’s own, I love making it even more simpler. One of those ways is by making a roasted veggie pasta.

It is as easy at it sounds: you roast some veggies in a dish and toss in pasta. That’s it! This is one of my favorite versions. It is simple but delicious and easy to make!

What you need (serves 4-5)

2 cups diced butternut squash

1/3 of an onion diced

1 head of broccoli diced

A few pinches of salt

A pinch of fresh ground black pepper

3 tbsp oil

3 cloves of garlic minced

1 12 oz box of pasta cooked (I used this gluten free one here)

Additional prepared protein of your choice

Directions:  Preheat your oven to 400. Toss the butternut squash, broccoli, onion, salt, pepper, 2 tbsp of oil and garlic in a baking dish. Place in the oven for 25-30 minutes. Remove from oven. Add the cooked pasta to the baking sheet along with the remaining oil and a few more pinches of salt to taste. Serve with additional protein. Enjoy!
