Fajita Bake

This Fajita Bake is one of my go to weeknight dinners. When it comes to eating healthier, having quick and easy dinner recipes in your toolkit is extremely helpful. Dinner is where a lot of us lean on things like take out, ready to go or premade meals, frozen meals, etc. because by the end of the day the last thing we want to do is cook. This is why I love easy to prepare meals like this Fajita Bake. It’s easy and it’s meal prep friendly so it will save you time on next days dinner or lunch too.

What you need (serves 3-4)

3 bell peppers sliced

1/2 an onion sliced

1 15 oz can black beans drained and rinsed

2 cups frozen corn

A few pinches of sat

1/4 tsp ground cumin

1/2 a tsp smoked paprika

1/2 a tsp chili powder

1/4 tsp ground coriander

2 tbsp oil

Additional prepared protein of choice & any toppings of your choice

Directions: Preheat your oven to 400. Line a baking sheet with parchment paper. Toss the first 10 ingredients onto the baking sheet. Place in the oven and roast for 25 minutes. Remove from heat. Serve with prepared protein and toppings. Enjoy.
