Fall Sweet Potato Brussels Sprouts and Chickpea Bake With Baked Salmon And Creamy Tahini Sauce
My favorite dinners to make are ones that are made on a baking tray in the oven. I love to toss a bunch of chopped veggies and a protein on baking trays with some simple seasonings and place them in the oven. They’re easy to clean up, easy to prep and they make the perfect leftovers for days ahead.
Sheet pan meals can save you time, minimize stress at dinner time and help you stick to healthy eating because they are meal prep friendly. When you have food prepped and ready to be put in a salad, wrap or over rice it makes it so much easier to stick to healthy eating throughout the week.
This is one of my favorite fall inspired sheet pan meals:
What you need (serves 4)
1 large sweet potatoes cubed
3 cups Brussels sprouts halved
1 15 oz can garbanzo beans drained and rinsed
1/3 of a large red onion diced
2 cloves of garlic minced
2 tsp dried or fresh thyme
2 tsp dried or fresh minced rosemary
A few generous pinches of salt
3 tbsp avocado oil
A pinch of fresh ground black pepper
4 filets of salmon
2 tsp smoked paprika
2 tsp garlic powder
3 tbsp tahini
The juice from 1 lemon
2-3 tbsp water
Directions: Preheat your oven to 420. Line 2 baking sheets with parchment paper. Toss the sweet potatoes, Brussels sprouts, garbanzo beans, red onion, minced garlic, a few pinches of salt, thyme, rosemary, 2 tbsp of avocado oil and the fresh ground black pepper onto a baking sheet. Place in the oven for 35 minutes. Meanwhile, coat each salmon in a little salt, 1/2 a tsp of paprika, 1/2 a tsp garlic powder and a drizzle of the remaining oil. Rub the seasoning on the salmon till it’s well coated. Place in the oven for 12 minutes. Meanwhile whisk together the tahini, lemon juice, a pinch of salt and water. Remove everything from the oven and serve the roasted vegetables with a filet of salmon and a drizzle of tahini sauce. Enjoy!
Helpful tips:
-save some roasted veggies or make a little extra to have in wraps throughout the week
-change up your sauce the next day if eating leftovers to keep them more exciting
