Delicata Squash Chickpea And Broccoli Bake With A Smoky Cashew Sauce
Eating seasonally has so many benefits:
-it’s usually cheaper and will save you money (especially when shopping organically)
-the food is typically higher in vitamins and nutrients because it was grown in ideal conditions
-it tastes better
I love including more squash during fall and winter because it is in season during that time and it is so nourishing for your body. Delicata squash is one of my favorites. It’s easy to work with and tastes delicious. This squash contains fiber which is essential for healthy digestion and Vitamin C which is essential for a healthy immune system and brighter skin - both of which are essentials to glow from the inside out.
This is one of my favorite ways to prepare it. This sheet pan meal is easy to assemble and it is meal prep friendly (helping you save time and eat healthier throughout the week!).
What you need (serves 4)
1 large or 2 medium delicata squashes sliced into thin crescents (you can peel beforehand or leave the skin on as it is edible)
1 head of broccoli florets
1 15 oz can garbanzo beans drained and rinsed
1 3/4 tsp salt
2 cloves of garlic minced
2 tbsp avocado oil
1 cup cashews
1 lemon juiced
1 1/2 tsp smoked paprika
1 tsp garlic powder
3/4 cup water
Fresh cilantro to garnish
Additional protein optional (I love this with quinoa, baked tofu or salmon)
Directions: preheat your oven to 400. Line a baking sheet with parchment paper. Add the squash, broccoli, garbanzo beans, oil, minced garlic and 1 1/4 tsp salt to the baking sheet. Toss and place in the oven for 25-30 minutes. Meanwhile add the remaining ingredients to a high speed blender and blend until smooth. Pour into a jar. Remove the baking sheet from the oven. Drizzle with the Smoky Cashew Sauce. Serve with additional protein and fresh cilantro. Enjoy!
