Honey Walnut Granola

When I began making granola at home I was amazed just how easy it was and how little time and effort it required. Healthier granolas in store or at the farmers market can be costly, ranging anywhere from $6 to $15. It is much more affordable to prep granola at home and I think it is more delicious.

Preparing granola at home can also be beneficial for your healthy eating journey. When you make foods from scratch it helps you to be more aware of the quality of ingredients you are cooking with as well as how much sugar you are consuming. Most granolas out there are very high in sugar and contain low quality ingredients like processed seed oils or non organic oats. When you make your own at home you get to control what goes in.

This granola recipe is one of my favorites. It contains minimal ingredients and minimal added sugars.

What you need:

1 cup organic rolled oats
A pinch of sea salt
1 tbsp raw honey
1/3 cup chopped walnuts
3 tbsp melted coconut oil (warm, not hot)
2 tbsp flax meal
1/4 tsp of pure vanilla bean powder or 1 tsp vanilla extract

Directions: Preheat your oven to 300. Line a baking sheet with parchment paper. Combine all of the ingredients together in a large mixing bowl and mix until well combined. Transfer to the baking sheet and flatten with a spatula or your hands until the granola is about 1/2 inch thick. Place in the oven for about 10-11 minutes. Remove from the oven and let it cool completely before breaking apart and transferring to a glass container. Store on the counter for up to a week.

Granola is a great addition to add to smoothie bowls, yogurt bowls or simply add to a bowl with fruit and plant mylk.

Tips to avoid burnt granola:

-Check on the granola periodically towards the end of the bake to prevent burning. Granola can burn quickly so be sure not to go over the recommended time. Once it is golden brown take it out.

-After removing the granola from the oven try to carefully remove it from the baking sheet and move it to a cooling rack to prevent it from cooking any longer to avoid burning.

-Keep the granola in the middle of the baking sheet and avoid pushing it to the back of the oven to prevent burning.
