Chocolate Chip Pb + J Energy Balls

I meal prep energy balls weekly for me and my family. They are the perfect grab and go snack for a mid morning or midday snack. Prepping your own healthy snacks can be extremely helpful when aiming to eat healthier. It takes away the need for reaching for packaged snacks which generally tends to be a not so healthy choice.

I love energy balls like these Chocolate Chip PB + J Energy Balls because they include protein, healthy fats and lots of fiber to help keep you full and satiated until your next meal. Most often times when we open a packaged snacks we can’t stop eating them until we reach the end of the bag. Even after we’re through eating we still aren’t full or satisfied. When you start switching to a more satisfying and satiating snack like these balls you will notice you won’t need more than 1-3 to feel satisfied.

What you need:

1 cup organic rolled oats

10-12 soft pitted medjool dates (soak in hot water for a few minutes to soften if needed)

1/3 cup peanut or almond butter

A pinch of salt

1/2 cup freeze dried strawberries

1/4 cup chocolate chips

Directions: Add the oats, nut butter, salt and dates to a food processor. Pulse until well combined. Transfer to a mixing bowl. Add the remaining ingredients and toss. Scoop out about 2 tbsp of batter per ball and form into balls. Store in an airtight glass container in the fridge for up to a week or in the freezer for longer.
