Coconut Pitaya Smoothie

If sweet for breakfast is your thing, then you are going to fall in love with this smoothie. This smoothie is packed with healthy fats, fiber and electrolytes. It is a superfood powerhouse that tastes like dessert and you can enjoy it for breakfast.

Let’s first talk about the color. This bright pink color comes from the fruit- pitaya, also known as dragonfruit. This color is created by nature, how cool is that?! It is rich in antioxidants like flavonoids, it is high in fiber (to keep you full and satiated) and it helps regulate blood sugar levels (to help regulate your mood, hunger and cravings throughout the day). Another cool fact is that it contains prebiotics which play an important role in gut health!

This smoothie also contains coconut flesh which is filled with MCTs that your body uses immediately for energy. It is also packed with fiber which keeps you satiated and full and it helps to regulate your digestive system.

It also contains coconut water which is packed with electrolytes, making this the perfect post- workout smoothie!

Ingredients:

8 oz. Coconut water
1 packet of frozen dragon fruit puree (which can be found in the frozen fruit aisle)
1 packet of frozen coconut puree (which can be found in the frozen fruit aisle)
2 tsp chia seeds
1 frozen banana
1 scoop of vanilla protein (I use this one here)

Optional- add a scoop of probiotic coconut yogurt (which can be found in a health food market)

Directions:

Blend all ingredients together in a blender, pour in a cup and enjoy!

How to customize this drink for dietary restrictions:

  • Use another plant based milk option like hemp seed milk in place of coconut water (great for nut allergies)

  • Skip the coconut and add frozen strawberries (great for nut allergies)
