Antioxidant Salad With Quinoa And A Honey Mustard Vinaigrette
This is one of my favorite salads. It is easy to make, delicious, packable and most importantly… good for you!!
This salad contains antioxidants which help fight free radicals and promote a healthy immune system as well as healthy glowing skin. It also contains healthy fats from the walnuts, avocado, pumpkin seeds and olive oil to support your metabolism, brain health and skin health. Plus, healthy fats with included fiber and protein will help keep you full and satiated (keeping those cravings at bay!)
I love using quinoa in this salad too because it is a complete source of protein and is amazing for healthy glowing skin.
I recommend meal prepping the quinoa and dressing ahead of time (double or triple the batch to last you for days) so you can throw this salad together in a pinch!
Serves 1
What you need:
A few handfuls of leafy greens
1/3 cup blueberries
1 small persian cucumber sliced
1 radish sliced
1/4-1/2 avocado diced
2 tbsp pumpkin seeds
2 tbsp chopped walnuts
1 cup cooked quinoa
1/2 tbsp raw honey (I used hot honey and it was amazing!)
2 tbsp olive oil
1/2 tbsp stone ground mustard
1 tbsp unfiltered apple cider vinegar
A pinch of salt
Add the honey, mustard, oil, apple cider vinegar and salt to a jar and whisk till smooth. Add the remaining ingredients to a large bowl. Drizzle the dressing on top. Toss and enjoy!
