Meatless Chicken Salad (aka Chickpea Salad)

This is my favorite recipe to meal prep. It’s simple and easy to make, requires minimal ingredients and stores well for a few days. I love keeping a batch in the fridge to top on greens, on toast or on a wrap.

Serves 3

Ingredients:

1 15 oz can garbanzo beans drained and rinsed and mashed

2 tbsp stone ground mustard

1/4 cup plant based mayo (I use this one here)

A few pinches of salt

A dash or 2 of paprika

2 celery stalks diced

3-4 dates pitted and diced (option to sub dried cranberries)

A little squeeze of lemon juice

Directions: Add all ingredients to a bowl and toss until well combined. Enjoy on collard greens for a low carb option or on some toast of your choice. Enjoy.
