Crispy Lentil And Avocado Caesar Wrap
After I became a mom of two I found lunch time to be stressful. Stopping to cook or prepare something for myself during lunchtime, while simultaneously feeding my toddler and settling my baby, became an additional source of stress for me. I started to either rely on random leftovers I could find in the fridge or throw together a meal in 5 minutes that wasn’t at all satisfying. I realized that in order for me to enjoy lunch (because, yes, us moms need to eat too) I had to get creative and find ways to make lunch quick and easy but also delicious.
Wraps have become a go-to lunch for me because they are so easy and versatile. This Crispy Lentil And Avocado Caesar Wrap is one of my favorite wrap ideas. It only requires a few ingredients but is still tasty.
I love this wrap idea because you can meal prep a big batch of crispy lentils and then easily toss them into wraps throughout the week. Once you have lentils prepped it will take just minutes to assemble your wrap.
Lentils are a great source of plant based protein. Plus they contain fiber which is essential for healthy digestion.
For the Caesar dressing I used this one here. If you want to make this but don’t have a Caesar dressing on hand simply whisk together 3 tbsp of tahini, the juice from 1 lemon, a pinch of sea salt, a few pinches of fresh ground black pepper and 3 tbsp of water. This simple peppery tahini sauce works as a great quick substitute!
What you need (serves 2):
1 15 oz can lentils drained and rinsed (or 2 cups cooked lentils)
a few pinches of salt
1/2 tsp garlic powder
1 tbsp avocado oil or other cooking oil
1/2 an avocado smashed
2 cups chopped romaine lettuce
2 large tortilla wraps (heat according to package instructions)
2 servings of Caesar dressing
Directions: Preheat your oven to 425. Line a baking sheet with parchment paper. Add the lentils, salt, garlic powder and oil to the baking sheet. Toss and place in the oven to bake for 30 minutes. Add the smashed avocado to the tortilla. Add the lettuce, lentils and Caesar dressing. Roll up into a wrap. Enjoy!
Store the lentils in an airtight container in the fridge for up to 5 days.
