Summer Veggie Grain Dish

There is something about going to the farmers market during the summer time and stocking up on colorful and vibrant in season produce. This is the time of year that I love most for creating meals at home and it’s when I feel most inspired to get creative in the kitchen. This is one of my favorite dinner recipes utilizing fresh summer produce.

This recipe is perfect for weekday dinners as it is quick to bring together. I recommend pre cooking a batch of brown rice to store in the freezer to add to this meal in a pinch.

Makes 4 servings

What you need:

2 cups cooked brown rice

1 tbsp oil

1/3 cup red onion diced

1 large bell pepper diced

1 large zucchini diced

1 large yellow summer squash diced

1 cup diced asparagus

A few pinches of salt

1/2 tsp dried oregano

1 tsp garlic powder or 2 cloves fresh garlic minced

1 handful of fresh basil minced

Fresh ground black pepper to taste

1 1/2 lemons juiced

Directions:

Heat a pan over medium heat. Add the oil. Then add the onion, zucchini, bell pepper and squash. Then add the salt, oregano, garlic, basil and black pepper. Cook for 5 minutes. Add the asparagus and cook for another 2-3 minutes. Add the lemon juice and the brown rice and toss together. Remove from heat and serve with your choice of protein.
