Plant Based Mac And Cheese

This dinner is one of our go to weeknight dinners. It is a classic comfort meal turned healthy and plant based.

I love this recipe because it only includes real whole foods including vegetables. It doesn’t contain processed plant based cheese or any dairy, yet it is delicious!

In this recipe you have the option to use sweet potato or golden potatoes. Sweet potatoes are on the sweeter side so the mac and cheese will be sweeter because of it. However it is still delicious! If you want more of a classic mac and cheese opt for a golden yellow potato. I have tried both and both are amazing!

What you need:

1 medium sweet potato or golden yellow potato diced

2 medium or 1 large sized carrot diced

1/2 of a small yellow onion diced

2 cloves of garlic peeled

1 cup raw cashews

1 lemon juiced

1/3 cup nutritional yeast

A few pinches of salt or to taste

About 1/3 cup of water plus more to thin

1 12 oz box of cooked pasta of your choice

Directions: Begin be steaming the potatoes, carrots, onion and garlic until the potatoes as soft enough for a fork to slide in and out easily. Transfer to a high speed blender with the remaining ingredients (leaving out the cooked pasta). Blend till smooth and creamy. Gradually add in water as needed. Pour over cooked pasta and toss. Serve immediately. Store in the fridge for up to 5 days. Enjoy!
