One Pot Southwest Veggie & Grain Dish

As a busy mom, I know just how important it is to be able to save time in the kitchen. This is why I love one pot meals like this One Pot Southwest Veggie & Grain Dish. It is packed with protein plus other essential vitamins and nutrients to supply you with everything you need to feel and look your best from the inside out.

This meal is so simple to make and doesn’t require a lot of clean up. I believe that in order to stick to a healthy eating plan, you need to simplify your cooking strategy. This is a meal that allows you to do just that.

I love this meal because you have the option to enjoy this as is or add your favorite toppings. In my home, everyone has their own favorite sauces and toppings, so this is ideal! I love adding a scoop of a coconut yogurt, a vegan sour cream, tahini, lemon juice or hot sauce on top! Get creative and enjoy!

Ingredients:
Serves 4

2 tbsp olive oil
1/2 an onion diced
2 cloves of garlic minced
1 cup frozen corn
1 small zucchini diced
1 large bell pepper diced
1 15 oz can black beans drained and rinsed
a few pinches of salt (add more as needed)
1 1/2 cups cooked quinoa
1 tsp smoked paprika
1 tsp chili powder
1 tsp dried oregano
a few tbsp of water

Directions: Heat a pan over medium heat on the stove top. Add the oil. Then add the garlic and onion. Cook until fragrant. Then add the corn, bell pepper, zucchini and black beans. Cook for 5 minutes. Then add the remaining ingredients. I recommend adding a few tablespoons of water at this point to keep the quinoa moist. Cook for another 3-5 minutes. Remove from heat and enjoy!
